The Altomena estate is located upon the hills overlooking the confluence of the rivers Sieve and Arno. The 984-ft elevation, the ground gentle slope, the nature of the soil, the exposure to the sunlight and the area’s microclimate
constitute the ideal conditions for olive cultivation. Altomena runs its lands according to the organic farming regulations and its extra virgin olive oil is certified by the competent authority. But since the more rigorous climate represents a natural immunization against the usual olive parasites, not even the pesticide methods allowed by the organic farming authority are used. The olives are hand picked from the trees in the earliest time of the season, and immediately pressed to retain the deep fruity flavors and the fresh and spicy aromas. In addition to the already mentioned characteristics, and thanks to the quick sequence of processing stages, Altomena extra virgin olive oil is also characterized by very low acidity. The flavors that can be found in Maiuscolo are typical of the flavors found in Tuscany, fresh grass , artichoke, tomato leaf, and ripe fruit. Altomena is run by Nico Sartori who is one of the leading producers in one of the most prestigious olive oil producing regions. Nico works very closely with the leading experts in olive oil production and is always at the forefront of new technology usage.
