The Authentic Greek Village Salad (Horiatiki) — And Why the Olive Oil Is Everything

The mistake most people make with Greek salad is not the tomatoes or the feta. It is the olive oil. A cautious drizzle of average oil turns great ingredients into something generic. A generous pour of Makaria Terra turns it into the dish you remember eating on a terrace in summer.

Horiatiki — literally "village salad" — has been made the same way in Greek homes for generations. No lettuce, no dressing, no fuss. Just peak-season vegetables, good olives, a slab of feta, and olive oil that is worth tasting on its own. Ingredients

  • 4 large ripe tomatoes, cut into rough chunks
  • 1 cucumber, cut into half-moons
  • 1 green pepper, sliced into rings
  • 1 red onion, thinly sliced
  • 200g good feta, placed in one block (not crumbled)
  • 80g kalamata olives
  • Makaria Terra EVOO — a very generous pour
  • 1 tsp dried oregano and flaky sea salt

Method

  1. Combine tomatoes, cucumber, pepper, and red onion in a wide shallow bowl.
  2. Season generously with flaky salt and leave for 2 minutes to draw out the juices.
  3. Arrange kalamata olives throughout.
  4. Place the feta block on top in one piece — do not crumble it.
  5. Pour Makaria Terra over everything with genuine generosity. This is not the moment to be cautious.
  6. Crumble dried oregano heavily over the top.
  7. Serve immediately with crusty bread to mop up the oil and tomato juices.

Cook's Note

The block of feta is traditional and correct. It softens slowly in the oil as you eat, and you break off pieces at the table. Crumbled feta turns the salad into something different — and lesser.

On the olive oil: a low-quality oil will taste flat and greasy here because there is nothing to hide behind. A high-polyphenol extra virgin like Makaria Terra brings grassy, peppery notes that lift the whole dish and balance the salt of the feta. You will taste the difference in every bite. Use more than you think you need.
