Some of the best things in this business happen because of a conversation you weren't expecting. Mine happened in a classroom in New York City, during an olive oil sommelier course that changed the way I thought about what I was building.
The instructor was Kostas — a Greek-born educator and certified olive oil sommelier who taught with the kind of quiet authority that comes from decades of genuine expertise. He wasn't just explaining tasting notes and polyphenol counts. He was telling the story of a culture that has been pressing olives since before most of the world had a written language. I found myself leaning forward in my seat.
After the session, I introduced myself. I told him what I was doing — building a curated range of single-estate extra virgin olive oils, sourced directly from producers who were doing things properly. I told him I wanted Greece in the range, but I didn't want just any Greek oil.
