Whipped Feta with Apollo Olive Oil: Easy 5-Minute Recipe
There are recipes you make because you have time, and recipes you keep because they make ordinary ingredients taste extraordinary. This five-minute whipped feta dip belongs in the second category.
It is creamy, salty, bright with lemon, and finished with a generous pool of Apollo extra virgin olive oil and chilli. Serve it with warm pita, toasted sourdough, crisp vegetables, or a spoon. No judgment either way.
Why olive oil is more than a dip
I used to think of olive oil as something that arrived at the table in a little bowl, waiting for bread. I still love that ritual, but I have come to think of good extra virgin olive oil as something much more useful: an ingredient that can elevate the whole dish.
When you add a confident olive oil to creamy cheese, roasted vegetables, beans, pasta, eggs, or a simple salad, it does more than add richness. It carries aroma, softens sharp flavors, brings ingredients together, and leaves a fresh, peppery finish. It is a kind of force multiplier in the kitchen. A small amount can make familiar food feel considered.
That is exactly what happens here. The feta provides salt and tang, the cream cheese or Greek yoghurt gives the dip a smooth texture, lemon keeps it lively, and Apollo brings the grassy, rounded flavor that makes the whole bowl taste finished.
Whipped feta dip ingredients
- 200g good-quality feta
- 100g full-fat cream cheese or thick Greek yoghurt
- 3 tbsp Apollo extra virgin olive oil, plus extra to finish
- 1 tsp dried chilli flakes
- Zest of 1 lemon
- Freshly cracked black pepper
- Warm pita bread, toasted sourdough, or vegetable crudités, to serve
How to make whipped feta with olive oil
- Add the feta and cream cheese or Greek yoghurt to a food processor. Blend for 2 to 3 minutes, scraping down the sides once or twice, until the mixture is smooth and creamy.
- Add the lemon zest and a generous amount of cracked black pepper. Blend briefly to combine. Taste before adding salt, as feta can vary in saltiness.
- Spoon the whipped feta into a shallow serving bowl. Use the back of a spoon to create a shallow well in the centre.
- Pour Apollo extra virgin olive oil into the well so it pools visibly across the top of the feta.
- Scatter over the chilli flakes and add a little more lemon zest or black pepper if you like.
- Serve immediately with warm pita, toasted bread, or crisp vegetables.
What to serve with whipped feta
This is an easy appetizer for a dinner party, but it is just as useful on a weeknight. Spread it on toast and top with sliced tomatoes. Spoon it beside roasted potatoes or grilled courgettes. Add a dollop to a bowl of white beans, lentils, or warm grains. It also makes a brilliant base for a simple lunch plate with cucumbers, olives, herbs, and leftover roast vegetables.
For an even more substantial dish, use the whipped feta as a sauce for pasta. Loosen a spoonful with a little warm pasta water, toss through the noodles, and finish with Apollo, chilli, and lemon. The cheese makes the sauce creamy while the olive oil keeps it glossy and aromatic.
A few simple ways to make it your own
- More heat: Add a pinch of Aleppo pepper or finely sliced fresh chilli with the dried chilli flakes.
- More freshness: Fold through chopped parsley, mint, or dill just before serving.
- More sweetness: Finish with a little honey for a beautiful contrast with the salty feta.
- More texture: Add toasted walnuts, pistachios, or sesame seeds on top.
- More dinner: Serve with roasted tomatoes, grilled peppers, or warm chickpeas for a satisfying meal.
The finishing pour matters
Because the olive oil is added at the end, its flavor stays clear and expressive. This is a good place to use an extra virgin olive oil you genuinely enjoy, not one you would hide in the back of the cupboard. Taste it on its own first, then let it meet the feta, lemon, and chilli.
For me, that is the pleasure of cooking with olive oil. It does not need to be treated as a dip alone or saved for special occasions. It can make cheese taste rounder, vegetables taste brighter, bread taste better, and a five-minute recipe feel like something you meant to make all along.
